The list of ingredients you will need
For these vegetable croquettes, you will first need two good zucchinis, 50g of broccoli and 50g of fine breadcrumbs. You will also need some oil for cooking, preferably rapeseed oil. So, you will cut the zucchini and broccoli in dices before steaming them for a good ten minutes.
Once the vegetables are cooked, you will first let them cool down and then mix them with half of the breadcrumbs. With your hands, shape them into walnut-sized croquettes and let them rest in the fridge for an hour. Before putting them in the oven at 180° after the hour has passed, roll them in the remaining breadcrumbs and drizzle with oil.
There you go, all you have to do is wait for the 7 minutes of cooking time to present them to your children with a little fish or meat.
