There are several types of tofu on the market today, the two main ones being: silken tofu and smoked tofu. The first type is used in baking and also to make miso soups. The second type is more widespread on the market. You can find it easily.
It is the one I prefer the most. It is firm and quite fragrant. I recommend to buy it in Asian grocery stores. It is also of good quality in the organic department. Here are two very nice tofu recipes.
For this first recipe I need 400 g of silken tofu, 200 g of pastry chocolate, 1 orange, 1 tablespoon of maple syrup. I start by melting the chocolate in a bain-marie. I choose a rather large bowl. I pour in the chocolate and the maple syrup. I whip the mixture with an electric mixer. I then add the silken tofu and whip until I get a very smooth mixture, a bit like liquid. We put it in the fridge for a minimum of 4 hours. It’s ready to go.
Vegetarian steak with tofu
For this second recipe, I take 200 g of firm tofu, 1 red onion, 1 handful of basil leaves, 2 cloves of garlic, 1 good pinch of paprika, a pinch of curry powder, a tablespoon of coconut milk and 200 g of grated beet. I take the tofu and crumble it in a blender.
I add the garlic cloves, basil, beet, onion, salt and pepper. I pour in the milk and spices and blend until I get a thick paste. I then form small steaks with my hands or with a soup spoon. Once done, I grill it on a pan. And enjoy!
